Music Therapy with Miss Moon

What better way to celebrate a new week (AND Halloween!!!) then by doing the Time Warp?!?! It is just a jump to the left, after all!!! Enjoy, and go easy on the pelvic thrusts... you could pull something!!! LOL

Yummm! Heavenly Holiday Desserts!!!



It's hard to believe that Christmas is less than a week away! This year has gone by so quickly, it's amazing to believe that 2011 is rapidly approaching! But until the ball drops, I admit that there are visions of sugar plums dancing in my head... BIG TIME! LOL So I have collected a drool-worthy assortment of decadent desserts that even Ebenezer Scrooge wouldn't say "Bah Humbug!" to... confections that would have a place of honor at anyone's Holiday table!

Red Velvet Sandwich Cookies

Ingredients
1 1/3 cups all-purpose flour
2 tablespoons cocoa powder
1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1/4 cup butter, room temperature
1 cup sugar
2 eggs
2 tablespoons buttermilk
2 teaspoons apple cider vinegar
1 teaspoon vanilla extract
1 tablespoon red food coloring
For the Cream Cheese Frosting:
1 pound cream cheese, softened
2 sticks butter, softened
1 teaspoon vanilla extract
4 cups powdered sugar
3/4 cup finely chopped pecans, optional

Directions
Preheat oven to 375 degrees F.

Mix together flour, cocoa powder, baking powder, baking soda and salt in a small bowl.

Cream together the butter and sugar until light and fluffy, about 3 minutes. Add the eggs 1 at a time. Then beat in the buttermilk, vinegar, vanilla and red food coloring. Once combined, add the dry ingredients to wet. Mix until thoroughly combined.

Onto a parchment lined sheet tray, drop batter using an ice cream scoop, forming 2-inch round circles.

Bake for 10 minutes, until baked through. Cookies should be cake-like and light. Allow to cool for a few minutes on the baking sheet, then remove to a wire rack to cool completely.

For the Cream Cheese Frosting:

In a large mixing bowl, beat the cream cheese, butter, and vanilla together until smooth. Add the sugar and on low speed, beat until incorporated. Increase the speed to high and mix until very light and fluffy.

Spread the cream cheese frosting between 2 cooled cookies and roll the edges in finely chopped pecans, if desired.

Butterscotch Bread Pudding

Ingredients
4 cups 1/2-inch cubes white bread
1 quart half-and-half cream
1/4 cup butter
1 teaspoon salt
2 teaspoons vanilla extract
1 cup firmly packed dark brown sugar
6 large eggs
Vanilla ice cream as an accompaniment

Directions
Preheat oven to 350°F (175°C). Butter 13 x 9 x 2-inch glass baking dish and spread bread cubes evenly in dish.
In a small saucepan heat half-and-half, butter, salt, and vanilla over medium heat until hot.
In a bowl whisk together sugar, eggs. Slowly add half-and-half mixture while whisking.
Pour mixture over bread cubes and bake pudding in middle of oven until puffed and golden, about 30 minutes.
Serve pudding warm with ice cream.
Makes 8 servings.

Individual Tiramisu Trifles

Ingredients
1 cup cold strong brewed coffee
3 tablespoons Marsala wine
1 (8-ounce) block 1/3-less-fat cream cheese, softened
1/2 cup (4 ounces) block-style fat-free cream cheese, softened
3/4 cup sugar
30 cakelike ladyfingers (2 1/2 [3-ounce] packages)
1 teaspoon unsweetened cocoa

Directions:
Combine coffee and wine; set aside.

Place cheeses in a medium bowl; beat with a mixer at medium speed until smooth. Gradually add sugar, beating until well blended.

Cut each ladyfinger crosswise into 3 pieces. Arrange 5 ladyfinger pieces into each of 9 wineglasses or small bowls; drizzle each serving with about 1 tablespoon coffee mixture. Spoon about 1 1/2 tablespoons cheese mixture into each glass. Repeat layers once; sprinkle evenly with cocoa. Cover and chill at least 1 hour.

Mocha Truffle Cookies

Ingredients
1/4 cup butter, cubed
1/4 cup semisweet chocolate chips
1-1/2 teaspoons instant coffee granules
1/3 cup sugar
1/3 cup packed brown sugar
1 egg, lightly beaten
1 teaspoon Spice Island® Pure Vanilla Extract
1 cup all-purpose flour
2 tablespoons plus 2 teaspoons baking cocoa
1/4 teaspoon baking powder
1/8 teaspoon salt
1/3 cup English toffee bits or almond brickle chips
1 ounce milk chocolate, melted

Directions
In a microwave-safe bowl, melt butter and chocolate; stir until smooth. Stir in coffee granules until dissolved; cool for 5 minutes. Transfer to a small bowl. Add the sugars, egg and vanilla.
Combine the flour, cocoa, baking powder and salt; add to chocolate mixture and mix well. Stir in toffee bits.
Drop by rounded tablespoonfuls 2 in. apart onto a baking sheet lightly coated with cooking spray.
Bake at 350° for 8-10 minutes or until set. Cool for 1 minute before removing to a wire rack to cool completely. Drizzle with melted milk chocolate. Yield: 15 cookies.

Mocha Nog Punch

10 parts Kahlúa Mocha
5 parts Absolut Vanilla
20 parts eggnog

Combine ingredients and serve in a punchbowl with a floating ice block.

Hint: Freeze ice with coffee beans for decoration.

Yummm! A Tasty Thanksgiving Feast!!


A sure sign that I am feeling better is that my mind has racing with recipes ideas for Thanksgiving this year. I put together a delicious assortment of goodies to truly be thankful for!

Smoked Turkey with BBQ Gravy

Ingredients

Rub:
2 tablespoons salt
1 1/2 tablespoons ground sage
1 1/2 tablespoons thyme
1/2 tablespoon black pepper
1/2 tablespoon Neelys Seasoning, recipe follows

Turkey Brine:
1 gallon water
2 cups salt
3 cups apple juice
1 cup bourbon
1 tablespoon black peppercorns
1/2 cup light brown sugar
1 (22-pound) turkey
Olive oil
4 cups hickory wood chips, soaked in water for 60 minutes
BBQ Gravy, recipe follows

For the rub:
Directions
Mix all ingredients in a small bowl and reserve.

For the brine:
Mix the water, salt, apple juice, bourbon, peppercorn, and sugar into a 5-gallon bucket lined with a resealable bag. Stir until the salt and sugar is dissolved. Add the turkey into the bag with the brine. In a garbage bag-lined ice chest filled with ice, place the bucket in and surround with ice. Keep in a cool place and let brine 6 hours or overnight. Turn the turkey after 3 hours. Remove turkey from the brine and pat dry with paper towels.

Rub the turkey with olive oil and massage the rub onto the Turkey.

Soak wood chips for 1 hour prior to cooking the turkey and drain well. Fill the chimney starter with charcoal and light. Burn until they ash over. Place the burned coals to 1 side of the grill. Place wood chips on top of coals. Line a standard size loaf pan with aluminum foil and fill 2/3 with water. Place in the grill opposite the coals.

Take the turkey and place on the grill over the pan of water. Insert a probe thermometer in the thigh to keep a check on the temperature as it cooks. Place the lid on the grill with the vent open.

The temperature should remain constant at 225 degrees F. You may need to add more coals and chips every few hours.

After 1 hour check the turkey, if the skin is golden brown cover with foil. Continue cooking for 4 to 6 more hours or until a probe thermometer reaches 160 degrees F.

Remove from the oven and let rest 20 minutes before you carve. Serve with BBQ Gravy.

Neelys Seasoning:
3/4 cup white sugar
1 1/2 cups paprika
3 3/4 tablespoons onion powder
Mix ingredients together and store in an air tight container for up to 6 months.

BBQ Gravy:
1 tablespoon vegetable oil
Drumstick, from turkey
Neck, from turkey
1 large onion, sliced
8 cups turkey stock or chicken stock
1/4 cup BBQ Sauce (recommended: Neelys BBQ Sauce)
Salt and freshly ground black pepper
Heat the vegetable oil in a saucepan on medium-high heat. Add the drumstick and neck and sear until brown. Remove from pan and reserve.

Lower heat and saute the onions. Add the stock, scrapping up the fond on the bottom of the pan. Add the drumstick and neck into the saucepan. Cover and let simmer until it comes to a boil; about 1 hour. Sauce will reduce down greatly. Remove turkey parts. Add BBQ sauce to pan and whisk together. Gravy will thicken. Season with salt and pepper.

Wild Rice and Mushroom Stuffing

2 cups wild rice (about 12 ounces)
4 tablespoons (1/2 stick) butter, divided
4 tablespoons extra-virgin olive oil, divided
12 ounces fresh shiitake mushrooms, stemmed, sliced
12 ounces oyster mushrooms, sliced
2 large onions, chopped (about 4 cups)
1 large dried ancho chile,* stemmed, seeded, finely chopped
2 cups brown basmati rice
5 cups low-salt chicken broth
3 bay leaves (preferably fresh)
1 teaspoon (or more) coarse kosher salt
1/4 cup chopped fresh Italian parsley

Preparation

Place wild rice in heavy medium saucepan. Add enough cold water to cover rice by 3 inches. Bring to boil. Reduce heat to medium-low and simmer until rice is almost tender, about 45 minutes. Drain.
Meanwhile, melt 1 tablespoon butter with 1 tablespoon oil in heavy large pot over medium-high heat. Add shiitakes; sauté until brown, about 7 minutes. Transfer to large bowl. Add 1 tablespoon butter and 1 tablespoon oil to same pot; heat over medium-high heat. Add oyster mushrooms; sauté until brown, about 5 minutes. Transfer to bowl with shiitakes.
Add 1 tablespoon butter and 1 tablespoon oil to same pot; heat over medium heat. Add onions to pot; sauté until golden and very tender, about 20 minutes. Add chile; stir 1 minute. Add remaining 1 tablespoon butter and 1 tablespoon oil to pot; add brown rice and stir 2 minutes. Add wild rice, broth, bay leaves, and 1 teaspoon coarse salt; bring to boil. Reduce heat to medium; cover and simmer until all rice is tender and liquid is absorbed, 35 to 40 minutes. Fluff rice mixture with fork. Stir in mushrooms and parsley. Season to taste with more salt and pepper. Stir briefly over medium heat until heated through. Transfer to large bowl.
* Available at many supermarkets and at specialty foods stores and Latin markets.

Hearty Garlic Greens

Ingredients

1 1/2 pounds autumn hearty greens, well washed, stems removed, and sliced into 3-inch strips
3 tablespoons extra-virgin olive oil
8 cloves garlic, sliced paper-thin
1 pound spinach
1/4 to 1/2 teaspoon red pepper flakes

Directions
Bring a large pot of salted water to a boil. Drop hearty greens into water and blanch for 4 minutes. Immediately plunge blanched greens into a bowl of ice-cold water to stop the cooking. Drain, squeeze dry, and set aside.
Heat oil and garlic in a large skillet over medium-low heat. Cook until the garlic is golden around the edges, 8 to 10 minutes. With a slotted spoon, remove garlic from skillet; set aside.
Raise heat to high. Add hearty greens and cook for an additional 5 minutes. Add spinach; season with salt and red pepper flakes to taste. Cook until spinach wilts, stirring frequently (about a minute). Return garlic to pan and stir. The greens can be served immediately or at room temperature.

Basil, Roasted Peppers and Monterey Jack Cornbread

Ingredients

1/2 cup unsalted butter, chilled and cubed
1 cup chopped onion
1 3/4 cups cornmeal
1 1/4 cups all-purpose flour
1/4 cup white sugar
1 tablespoon baking powder
1 1/2 teaspoons salt
1/2 teaspoon baking soda
1 1/2 cups buttermilk
3 eggs
1 1/2 cups shredded pepperjack cheese
1 1/3 cups frozen corn kernels, thawed and drained
2 ounces roasted marinated red bell peppers, drained and chopped
1/2 cup chopped fresh basil

Directions

Preheat oven to 400 degrees F (205 degrees C). Butter a 9x9x2 inch baking pan.
Melt 1 tablespoon butter in medium nonstick skillet over medium-low heat. Add onion and saute until tender, about 10 minutes. Cool.
Mix cornmeal with the flour, baking powder, sugar, salt, and baking soda in large bowl. Add 7 tablespoons butter and rub with fingertips until mixture resembles coarse meal.
Whisk buttermilk and eggs in medium bowl to blend. Add buttermilk mixture to dry ingredients and stir until blended. Mix in cheese, corn, red peppers, basil, and onion. Transfer to prepared pan.
Bake cornbread until golden and tester inserted comes out clean, about 45 minutes. Cool 20 minutes in pan. Cut cornbread into squares.

Pumpkin Cheesecake

Ingredients:

Crust:

1 cup (100 grams) graham cracker crumbs
1/2 cups (50 grams) finely ground ginger cookies, homemade or store bought
1 tablespoon (15 grams) granulated white sugar
4 - 5 tablespoons (56 - 60 grams) unsalted butter, melted

Cheesecake:

2/3 cup (145 grams) light brown sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/8 teaspoon ground cloves
1/8 teaspoon ground nutmeg
1/4 teaspoon salt
1 pound (454 grams) cream cheese, room temperature
3 large eggs
1 teaspoon pure vanilla extract
1 cup (210 grams) pure pumpkin puree (canned or homemade)

Topping:

1 cup (240 ml) sour cream
1 teaspoon pure vanilla extract
1/4 cup (50 grams) granulated white sugar

Directions:

Preheat oven to 350 degrees F (177degrees C) and place the oven rack in the center of the oven. Butter (or spray with a non stick spray) an 8 inch (20 cm) spring form pan.

For Crust: In a medium sized bowl combine the graham cracker crumbs, finely ground ginger snap cookies, sugar, and melted butter. Press the mixture onto the bottom of the prepared spring form pan. Cover and refrigerate while you make the cheesecake filling.

For Cheesecake: In a separate bowl, stir to combine the sugar, cinnamon, ginger, cloves, nutmeg, and salt.

In the bowl of your electric mixer (or with a hand mixer), on low speed, beat the cream cheese until smooth (about 2 minutes). Gradually add the sugar mixture and beat until creamy and smooth (1 to 2 minutes). Add the eggs, one at a time, beating well (about 30 seconds) after each addition. Scrape down the sides of the bowl and beat in the vanilla extract and pumpkin puree.

Pour the filling over the chilled ginger crust and place the spring form pan on a baking sheet to catch any drips. Place a cake pan, filled halfway with hot water, on the bottom shelf of your oven to moisten the air. Bake the cheesecake for 30 minutes and then reduce the oven temperature to 325 degrees C (165 degrees C) and continue to bake the cheesecake for another 10 - 20 minutes, or until the edges of the cheesecake are puffed but the center is still wet and jiggles when you gently shake the pan.

Meanwhile whisk together the sour cream, vanilla extract and sugar. Pour the sour cream mixture over the top of the baked cheesecake and rotate the pan slightly to evenly distribute the topping. Return the cheesecake to the oven and bake about 8 minutes to set the topping. Remove from oven and place on a wire rack to cool. Loosen the cake from the pan by running a sharp knife around the inside edge (this will help prevent the cake from cracking). Then place a piece of aluminum foil over the top of the pan so the cheesecake will cool slowly. When completely cooled, cover and refrigerate at least eight hours, preferably overnight, before serving.

Serves 10-12 people.

:::drools::: Hopeful Holidays - My Dream Christmas Tree!

Yep... I am still at it: the dreaming and planning and envisioning. This time, my focus is on the tree. I've been researching into what type of tree I'd love for Chris and I to get, and how I'd like us to decorate it.

Of course once I get the key into the door of our dream apartment in Bed-Stuy, I will probably change my mind (I'm like that.. lol)... But until then, here are the components of My Dream Christmas Tree... Enjoy!


Of course, I have to start with the tree itself: After doing much searching, I really think this Holiday Living 7' Heritage Spruce Christmas Tree from Lowe's is BEAUTIFUL (And the low, low price of $73.50 makes is damn near gorgeous!).

And what I really dig is the fact that this tree features the "Ready to Light" system: It's pre-wired with extension cords, so that we can add lights to the tree, and plug it in. AND.. once the holidays are over, we don't have to worry about untangling cords. We can leave the lights on the tree and store it away (safely, of course) for next year. How dope is that?!?!?!?

And speaking of lights, here are my picks for the twinkle twinkle adornments of the tree.

Yummm! Holiday Entertaining

I think one of the reasons I like Tracee Ellis Ross (or rather her "Girlfriends" character, Joan) so much is that I am a TOTAL DORK about all things Holidays!!

In my mind, Chris and I have moved out of my Mum's place, and are currently in our own FABULOUS apartment. One I can deck the halls with and prepare a feast for friends and family alike for the Holidays.

Of course, this time next year, we will actually be in our own fabulous apartment, have the halls decked and the family and friends coming over and I will probably be kvetching about peeling potatoes or whatnot! LOL

In the meantime, I sit here at my laptop and dream of Holiday Entertaining... And Holiday RECIPES!!!!!



Pomegranate-Champagne Punch

Ingredients

1 1/2 cups pomegranate juice
1 cup pear nectar
1/4 cup orange-flavored liqueur, such as Grand Marnier
1 bottle (750 ml) Champagne

Directions

In a large pitcher, combine pomegranate juice, pear nectar, and orange-flavored liqueur. Slowly add Champagne. Serve over ice.

Helpful Hint: We used Champagne in this punch, but other sparkling white wines, such as Prosecco, are equally festive and just as good.



Conch Fritters

Ingredients

2 cups Conch rough chopped
1 cup Flour as needed
1/4 cup Corn Meal
1 large Egg
1/2 cup Milk
3 tablespoons Butt Kickin' Blacken Jamaican Jerk
1 teaspoon Kosher Salt
1/4 large Red Bell Pepper
1 medium Pablano Pepper
2 medium Jalapeno Chile Peppers
1 Vegetable Oil for frying
1 Table Salt

Preparation

1. Rough chop the Conch and set aside.

2. Mix together all of the other ingredients, but withhold a little of the flour. Add the chopped Conch and mix up well. The batter should be fairly thick. You should be able to place some on a spoon, turn the spoon over, and it'll stay there. If it's not thick enough add more flour, a little at a time, until you've got the proper consistency.

3. Heat oil at least 1" deep in a black frying pan. When the oil is hot enough, about 350 degrees, place fritters into the hot oil. You to tablespoons to make fritters. get some of the fritter batter in one spoon, then use the other to slide it directly into the hot oil.

4. Fry until they're brown on one side, then flip them over to brown the other side. Take them out of the oil, and place them on a grate to drain. Sprinkle immediately with salt.

5. Serve immediately while hot, with Cocktail Sauce and Tarter Sauce on the side.

6. Butt Kickin' Blacken contains neither salt nor sugar, and can be ordered at www.capnrons.com.

7. If you use a different blacken seasoning blend, be careful because most of them include a lot of both salt and sugar. You'll have to adjust the recipe accordingly.


Rib Roast with Madeira Gravy

Ingredients

2 teaspoons salt
1 1/4 teaspoons ground thyme
1 teaspoon pepper
1 boneless beef rib roast, 7 to 8 pounds

-- GRAVY --
1/2 pound sliced fresh mushrooms
1/2 cup finely chopped onion
2 tablespoons tomato paste
3 cups beef broth
1/4 cup all-purpose flour
1/2 cup Madeira wine (or additional beef broth)
2 tablespoons lemon juice
Salt and pepper to taste

Preparation

Combine the salt, thyme and pepper; rub over roast. Place fat side up on a rack in a shallow roasting pan. Bake, uncovered, at 350 degrees for 3 hours or until meat reaches desired doneness (for medium-rare, a meat thermometer should read 145 degrees; medium, 160 degrees; well-done, 170 degrees). Transfer to a warm serving platter. Let stand for 20 minutes.

Meanwhile, for gravy, pour pan drippings and loosened browned bits into a 4-cup measuring cup. Skim fat, reserving 1/4 cup; set drippings aside. In a skillet, saute the mushrooms and onion in reserved fat until tender. Add tomato paste; cook and stir until combined. Remove from heat.

Add enough beef broth to reserved drippings to measure 3 1/2 cups. In a large saucepan, combine the flour, wine, lemon juice and broth mixture until smooth. Stir in mushroom mixture. Bring to a boil; cook and stir for 2 minutes or until thickened. Season with salt and pepper. Slice roast and serve with gravy.

Makes 14 to 16 servings.



Herb-Roasted Red Potatoes

Ingredients:

8 small red potatoes, cut into wedges
1 medium onion, cut in 6 to 8 wedges
1 tablespoon olive oil
2 teaspoons butter
1/2 teaspoon dried dillweed
1/2 to 1 teaspoon chopped basil, fresh or freeze-dried
1 to 2 teaspoons chopped parsley, fresh or freeze-dried
1/2 teaspoon salt
1/4 teaspoon coarsely ground black pepper
Preparation:

Preheat oven to 400°. Oil a shallow baking pan.
Combine potato wedges, onion wedges, and seasonings in a large bowl; toss to combine and coat potatoes. Transfer potatoes to the prepared pan. Roast for about 30 to 40 minutes, turning occasionally, until potatoes are tender and golden brown.
Serves 4.

Yummm! Alternatives for a Funky Turkey Day!!!

I want to make the turkey this year for Thanksgiving... and I am really looking forward to it. This year, instead of the usual tried and true... I am heading towards something new!

Here are a few turkey recipes that I've scoured the internet to find. The first one is the one I am looking forward to trying (Though I always wanted to tackle a deep fried turkey... if only I had a bigger kitchen!)

Bourbon Brine Roasted Turkey With BBQ Gravy

INGREDIENTS
1 item gallon water
2 cup salt
2 cup apple juice
1 cup bourbon or additional cup of apple juice
1 tablespoon black peppercorns
½ cup light brown sugar
1 item turkey (12–14 pounds), reserve neck and giblets for gravy ( Rub recipe follows)
2 tablespoon salt
1½ tablespoon ground sage
1½ tablespoon thyme
½ tablespoon black pepper
½ tablespoon Neely's seasoning (recipe follows)
1 item Olive oil for rubbing on turkey
¼ cup white sugar
½ cup paprika
1¼ cup onion powder ( BBQ Gravy recipes to follow)
1 tablespoon vegetable oil
1 item Reserved neck and giblets from turkey
1 item large onion, sliced
8 cup turkey stock or chicken stock
2 tablespoon Wondra or flour
¼ cup BBQ sauce (recommended: Neely's BBQ Sauce)
1 cup Salt and freshly ground black pepper

PREPARATION

Pour brine ingredients into a clean 5-gallon bucket lined with a resealable bag. (Editors' note: Try Thekitchenstore.com's Turkey Brining Bag.) Stir until the salt and sugar dissolve, add turkey, and seal bag. Use a garbage bag to line an ice chest, and insert bucket with turkey, making sure to surround it with ice. Keep in a cool place, and let soak for 6 hours or overnight, but flip the turkey bag halfway through. Remove turkey from brine and pat dry with paper towels.

Preheat the oven to 350°F, and mix all ingredients in the rub together, except for the olive oil. Rub the turkey with some olive oil and massage the rub onto the turkey. Tie up the wings and legs of turkey with white cotton string, if desired, and place turkey on a rack in a roasting pan. Cook for 1¾ hours, remove from oven to baste with the pan drippings, then cook for another 1¾ to 2 hours or until a thermometer inserted into the thickest part of the thigh registers 165°F and the juices run clear. Place a piece of aluminum foil over—but not touching—legs or wings if the skin there begins to get too dark. This "tenting" shields them from some heat.

While turkey is in oven, make BBQ gravy. Heat vegetable oil in a saucepan on medium-high heat. Add the neck and giblets, sear until brown, remove from pan, and reserve. Lower heat and sauté the onions. Add the stock, scraping up the food on the bottom of the pan. Add the neck and giblets back into the saucepan, cover, and let simmer until it comes to a boil. Reduce heat and cook for about 2 hours. Remove turkey parts. Place 1 cup of the gravy into a medium bowl and whisk in the Wondra or flour until smooth. Add the thickened gravy back to the pot along with the BBQ sauce. Whisk the gravy until it is thickened as desired. Season with salt and pepper to taste. Remove turkey from oven, and let rest 30 minutes before you carve and serve with gravy.

Deep-Fried Turkey



Cook Time:40 min
Level: Difficult
Yield: 12 to 16 servings

Ingredients
5 gallons peanut oil*
10 to 15-pound unstuffed turkey
1 stick butter
1/2 teaspoon garlic powder
1/2 teaspoon cayenne pepper
2 tablespoons House Seasoning, recipe follows
Directions
*Cooks Note: To measure the amount of oil needed to fry the turkey, place turkey in fryer, add water to top of turkey, remove the turkey and the water line will indicate how much oil will be needed to fry your turkey. Having too much oil can cause a fire. The pot should not be more than 3/4 full or the oil could overflow when the turkey is added.

Pour peanut oil into a 10-gallon pot. Put pot on propane cooker and heat oil to 400 degrees F.

Have turkey completely thawed and dry turkey thoroughly. Tie 2 cotton strings around carcass so bird can be easily lifted out of oil. Carefully submerge turkey in oil.

Deep-fry for 3 to 4 minutes per pound and cook until turkey floats to the top. Remove bird from oil and place on a platter or cutting board.

In a small pan, melt the butter. Add the garlic powder, cayenne and House Seasoning. Brush turkey with butter mixture. Pour any remaining butter mixture inside the turkey. Allow to cool 20 to 30 minutes before carving.

Please be extremely careful when deep-frying the turkey. Do it outdoors on a level and non-flammable surface.

House Seasoning:
1 cup salt
1/4 cup black pepper
1/4 cup garlic powder
Mix ingredients together and store in an airtight container for up to 6 months.

:::drools::: Holiday Decor that is Pretty as a Peacock

I like the unconventional. In fact, I am a bit dorky about it. I am also a bit dorky about the holidays. I fantasize about having holiday parties: delicious food, family, friends, great music and of course... my place decked to the nines.

I always envisioned my living room adorned with peacock colors. In fact, I'd like to call it "The Peacock Room"... and I think that these decorations will be perfect for embracing the holidays in my own unconventional way:



I heart this tree SOOOO much!!! It's just so bright and cheerful and funky!!! It's just everything I envision and more!!



And beneath my tree, I love the idea of placing my gifts on this beautiful, shimmery tree skirt.



And I have to have the front door decked out too! In my mind, I am ready for the holidays! I just need a place to put all this stuff in!! LMAO
